This is caused by the fact that South America, in general, is further east than North America.

It depends on your point of view.
A ship originating in Hong Kong bound for New York would be going from the East (Eastern Hemisphere) to the West (Western Hemisphere). However in pure directional terms, crossing the Panama canal would still be done by in an Easterly direction to the Atlantic (via the Caribbean sea).
